The Damascus KU series is backed by the long history of Japanese sword making technique.
The blade consists of a core steel & 16 layers of stainless steel on both sides, Rockwell 59-60. The core steel is VG-10 which is superior in wear resistance as well as long edge retainment. The laminated steel is folded up and back many times while being hammered out. This forging process finally creates 16 layers of beautiful Damascus pattern on the surface of the blade. The wonderful combination of super sharpness of VG-10 and the beautiful 32 layers of Damascus make the KU series a top choice by professional chefs. Each knife is delivered in nice presentation box.

Hattori HD Series Damascus Kitchen knives. Traditional technology has combined with modern material for high cutting performance. Available in 8 different blades to meet with every cutting task. Made of VG-10 core cutting edge forged with 63 layered Nickel Damascus stainless steel blade. VG-10 is the newly developed High Carbon (0.95 to1.05%) Molybdenum (0.90 to 1.20%) and Vanadium (0.10 to 0.30%) stainless steel plus 1.30 to 1.50% Cobalt added to increase strength. Rockwell hardness 60 to 61 HRC. The beautiful Damascus blade is hand engraved with Ichiro Hattori name in Kanji and permanently welded with stainless steel bolster. Full tang black Pakkawood handle with three stainless steel rivets. Comes with fancy gift box.

Custom grade chef's knives. Beautiful, 49 layer Nickel stainless steel Damascus, 2mm thick blades. VG-10 steel core for the razor sharp edge and a HRC-60 hardness.
Full tang construction with stainless steel handle pins and a beautiful mosaic pin in the middle. The handles are of Ivory Dupont Corian with a cocobolo or rosewood spacer. The handle is contoured to fit the hand comfortably. Seamless stainless steel bolsters.
